Executive chef Kenneth Hayden, Jr. came to Lift for Life Academy with a background of working in country club dining rooms. He chooses to be innovative in the type of food he serves the 573 students at the charter school - offering made to order lunch specials and concentrating on fresh food. During lunch Wednesday Jan. 25, 2012, Hayden prepared shrimp fried rice, using peas and carrots in the dish but no oil. It's fun to expose the kids to something new, said Hayden. We give them the chance to try tilapia or halibut...to offer them something that they've never tasted before and like it.
