Chef Ryan LaRoche gathers ingredients in the open kitchen of NoMI restaurant in Chicago. About an hour before dinner service, he prepares the evening's special himself and then talks the waitstaff through it before allowing them each to eat some of it. This evening's special, in mid-spring, was olive-oil-poached halibut with morels, fava beans, fiddlehead ferns, ramps and fingerling potatoes.
